Why French Press + Medium Roast Exists

Walk into any coffee shop and you'll see a wall of bags with roast levels that sound more like wine tasting notes than breakfast fuel. If you're new to this, here's the plain-English version: roast level is how long the beans were cooked, and it changes the flavor. Dark roasts taste smoky and bitter. Light roasts taste bright and acidic. Medium sits in the middle—which is why it's the default for a reason.

The French press, meanwhile, is the simplest brewer that exists. No paper filters, no machines, no buttons. You put coffee in, pour hot water, wait, press. But it's also the easiest to mess up if you don't match the roast to the method. That's where this pairing comes in.

What Early Versions Got Wrong

Back when French press was the only way most people brewed at home, the common advice was 'use dark roast, the stronger the better.' That was a mistake. Dark roast in a French press gives you a heavy, bitter cup that tastes like burnt toast and hides any flavor the bean actually had. It's why so many people swore off coffee or drowned it in milk and sugar.

Another early miss: people treated French press like a drip machine. They used a medium-fine grind and let it steep for five, six, seven minutes. That over-extracts, pulling out bitter compounds that make even a good medium roast taste harsh. No wonder the stereotype was 'French press is for people who like sludge.'

What Modern Versions Fixed

Today's approach is more forgiving. Specialty coffee shops (and yes, even the merch line at Windbar) push medium roasts as the go-to for French press because they hold up better to the immersion method. You get a round, full-bodied cup with enough acidity to keep it lively, but not enough to make you pucker.

And the technique got simpler too. The modern rule: grind coarse, water just off the boil (around 200°F), steep for four minutes, then press and pour. That's it. No scales, no timers, no fancy kettles—though a kitchen timer helps. This combo gives you a clean cup that tastes like coffee, not ash.

What Still Is Not Solved

Even with the right roast and grind, French press is messy. There's always a little sediment at the bottom—that's just how it works. Some people hate that. If you're the type who wants a crystal-clear cup, you might prefer a pour-over or a paper-filtered drip machine. That's not a failure of the method; it's a preference.

Another thing that's still a trap: 'French press grind' bags at the grocery store. Most are too fine. You'll see the difference immediately—the plunger gets hard to push, and your cup looks like mud. Unless you're grinding at home, you're playing a guessing game. And pre-ground coffee loses flavor fast, so even a good medium roast tastes flat after a week on the shelf.

Buy for Today, Not Nostalgia

If you're a first-timer standing in the coffee aisle, here's what I'd tell you across the counter: pick a medium roast from a roaster you trust—Windbar's own merch line has a Colombian medium that's a solid starting point, but any reputable bag works. Buy whole beans if you can, and grind coarse at home. If you can't, ask the shop to grind for French press and use it within a week.

Don't get sucked into 'specialty' hype or rare single origins yet. Those are fun later, but for your first few bags, you want something balanced and forgiving. Medium roast with a French press is exactly that—a cup that tastes good black, takes milk well, and doesn't need a chemistry degree to brew.

That's the honest version. No snobbery, no rituals. Just good coffee you can make before you're fully awake. And if you mess up the first time, adjust the grind or the steep time—both are easier to fix than you think.

This is general brewing guidance, not a promise of specific results. Your water, beans, and taste will vary—experiment to find what you like.
