Term you hear first: Bloom

You'll hear this one the moment you watch anyone brew pour-over. The bloom is the first pour—just enough hot water to wet the coffee grounds, usually about twice the weight of the coffee. So if you're using 20 grams of coffee, you pour about 40 grams of water.

What it does: the grounds release trapped CO2, which would otherwise make your coffee taste sour and uneven. You'll see bubbles and a slight rise. That's normal. Let it sit for 30-45 seconds, then continue pouring.

Skipping the bloom is the fastest way to a mediocre cup. It's not a fancy ritual; it's basic chemistry. If you're new to pour-over, start here.

Term sellers overuse: Ratio

Every coffee brand talks about ratio like it's a secret code. It's not. Ratio simply means how much coffee to how much water.

A common starting point is 1:16—one gram of coffee for every 16 grams of water. That's about 60 grams of coffee per liter. But here's the thing: you don't need a scale to start. If you have a scale, great. If not, use a tablespoon (about 5-7 grams, depending on grind) and adjust by taste.

Sellers will tell you their ratio is the 'perfect' one. Ignore that. Your taste buds are the final judge. Start with 1:16, then tweak: more coffee for a bolder cup, less for a lighter one.

Term that actually matters: Grind size

If you remember one thing, let it be this: grind size makes or breaks your brew.

For pour-over, you want a medium grind—think sea salt. Not too fine (that's for espresso), not too coarse (French press). If your coffee tastes bitter, it's likely over-extracted; go coarser. If it tastes sour, it's under-extracted; go finer.

A burr grinder is worth the investment if you're serious. Blade grinders crush unevenly, which leads to inconsistent extraction. But even a blade grinder can work if you shake it a bit and don't obsess.

Terms you can ignore: Slurry, TDS, and extraction yield

Some people love throwing around terms like 'slurry' (the coffee-water mix) or 'TDS' (total dissolved solids). They sound impressive but don't help you brew better at home.

What actually matters: taste. If your coffee tastes good, you're doing it right. These terms are for roasters and lab folks. You can enjoy your cup without ever saying 'extraction yield' out loud.

How to talk to staff without sounding lost

When you walk into a specialty coffee shop and want to buy beans, you don't need to speak the lingo. But a few key phrases help:

• Ask for a 'medium roast' if you want balanced flavor.
• Say 'I brew pour-over at home' and ask for a grind recommendation.
• Mention your ratio (e.g., 'I use 1:16') and ask if they'd adjust anything.

Staff are usually happy to help. They'd rather you ask than guess. And if you're a wholesale buyer, ask about their brew guides—many roasters provide specific recipes for their beans.

One more thing: water matters. Use filtered water if your tap water tastes heavy or chlorinated. Water is 98% of your cup, so it's worth a thought.

Now, go brew. Spring is the perfect time to dial in your pour-over routine, and with these terms under your belt, you'll be speaking the language in no time.
